What is pH value?
PH is the concentration of free hydrogen ions in a liquid. The pH of pure water is 7. Liquids that have a greater concentration of hydrogen ions than pure water are acidic and have a pH of less than 7. Conversely, liquids with a lower concentration of hydrogen ions are basic and have a pH above 7. The pH scale goes from 1 to 14.
Can I measure the pH instead of the acidity of my must?
No! Acidity in winemaking is the number of grams of acid in your wine/juice, usually expressed in grams of tartaric acid per liter. This can only be measured with blue liquor. However, you can use a pH meter in combination with blue liquor: Instead of adding blue liquor until the color changes to blue, add blue liquor up to pH 7.00. This method is much more accurate and much easier to read for red juices, among others! The combination of pH meter - blue liquor and automatic burette is a professional setup for accurate measurement of acidity.
