The wood of the apple tree is of medium strength and can be found in large parts of the temperate climate zone. Apple wood is valued in culinary circles primarily for its pleasant fragrance and sweet smoking aroma.
Foods such as seafood, fish, especially salmon, and shellfish are particularly suitable for smoking with applewood. Mock chops, filets, and veal also benefit from the sweet note, as do fruits and vegetables. For optimal flavor, soak the smoking chips in water, apple juice, ale, wine or cider, Chardonnay, Pinot Noir or pineapple juice for at least 30 minutes before using. When ready to use, remove the smoking chips from the liquid, pour into the Napoleon smoking pipe and place over the flame guard inserts.
You can also fill the smoking chips directly into the Prestige PRO665RSIB's built-in smoking insert or place them on the glowing coals in the Apollo Smoker AS300K or AS200K. When the chips begin to smoke, place the food on the grill and close the grill lid. Keep the lid closed as much as possible to help the whiskey aroma to develop.
