Oenoferm® Terra is used for a spontaneous but reliable fermentation process. Authentic wines with terroir character can be vinified with it. The yeast strain ferments both white and red musts or mashes neutrally and safely. The grape's own primary aromas are reliably preserved and are not overpowered by undesirable fermentation byproducts. The terroir characteristics, which are shaped by the location, soil conditions, microclimate, topography, type of vineyard cultivation, and last but not least, the oenologist's handwriting, among other factors, are supported.
Favorable fermentation temperatures:
White must: 17-22 °C; red must/mash: 22-28 °C.
One addition of 20-30 g Oenoferm® Terra per 100 l must.
