The beaker part is filled with pure water to about half the height (up to the marking) and the lid part is placed on top. The carbonic acid gas produced during fermentation escapes through the fermentation bung, the lid of which is now constantly raised and lowered (control noise). It is advisable not to fill the barrel to the brim, but only to 80%. For the storage of wine, must or sweet must, use sulfurous solution (water with 1-2 tablets of Onewe).
