The cup part is filled approx. up to half the height with pure water (up to marking) and the lid part is put on. The carbonic acid gas produced during fermentation escapes through the fermentation bung, the lid of which is now constantly raised and lowered (control noise). It is advisable not to fill the barrel to the brim, but only to 80%. For the storage of wine, must or sweet must, use sulfurous solution (water with 1-2 tablets of Onewe).
