From sweet jams to sour pickles!

They bring the summer into the jar, whether for private use or for sale in the farm store: our farmers' wives. Their best preserving recipes are now available in a book. With the "Bäuerinnen-Einkochbuch" the success of the series, in which the best recipes of Austrian farm women were presented in the last years, is continued and made durable so to speak.
Stockpiling by means of preserving and pickling is one of the domains of agricultural enterprises. No miracle therefore that one became more than fündig in the kitchens of domestic farms and the selection from the sent in prescriptions accordingly heavy fell. The range of recipes starts with the great classics: strawberry, currant, cherry and apricot jam. Equipped with a good dash of creativity, the fruits are also used to make raspberry champagne jam, paprika jam, Christmas jam with plums and oranges or rowanberry jelly and apple jelly with cranberries and horseradish, as well as a wide variety of compotes.
Since the harvest time does not only give us sweets, but also a lot of vegetables, there are naturally also many recipes in the book: Whether pickles, peppers pickled in vinegar or green tomatoes, whether Russian cabbage, beetle beans and mushrooms, whether garlic and pepperoni in oil the summer lives on in the glass and transforms the winter snack into a healthy pleasure.
Speaking of enjoyment: our farmers also preserve herbs and soup vegetables with salt and thus preserve the full flavor for winter cooking.
