The traditional ham bodegas are located in the mountains (Sierra), from which the word Serrano is derived. A Jamón Serrano always comes from the Cerdo Blanco (white pig), i.e. domestic pig such as Duroc or German Landrace. It is immediately recognizable by its white claw (pata blanca). Its meat is much cheaper than the pata negra (black claw) ham from cerdo Ibérico. After the grain fattening, the whole shanks are placed in sea salt for a short time and then mature in the bodega without the use of fans or maturing chambers, just in the mountain air! Artesano, so all handmade. The tender ham is little salty, its flavor harmoniously mild and slightly nutty.
A cheap, industrially produced by intensive fattening and turbo drying chambers, I do not carry. Animal ethics and high quality standards are my reasons!
