Organic pork is a rarity in our country, I think. Organic Serrano quite rare. Here I offer a top Serrano Gran Reserva in organic quality. In Castilla Leon, the domestic pigs are kept outdoors and fed with seasonal organic feed. The growth cycle takes twice as much time as normal fattening. As usual, the whole ham hocks are soaked in sea salt for a short time in the bodega and then air-dried for 18/24 months. No other additives are added. The production process is artesano, so it must be done without the use of technical aids. Finally, the shanks are boned, top dressed, split and vacuum packed. Unpack and cut - 100% output!
