Usage: Meat, game and poultry dishes, ham, sauerkraut, cabbage, smoked meat, fish marinades, spirits (Genever, Gin Steinhäger, Doornkat, etc.), soups, sauces, smoking powder, tea, for pickling and pickling. The Scandinavians add juniper berries to marinades for meat. In northern France the berries are used in game dishes and pâté, and in Alsace and Germany in sauerkraut. Crushed berries can be mixed with salt and garlic and rubbed into wild fowl before roasting. Combined with clove pepper and pepper, juniper is used to season beef. Juniper goes well with garlic, with aromatic herbs like marjoram and rosemary, with wine, beer, brandy and especially gin. Use it in marinades and sauces for pork and game, in pickle brines, dry salt mixes and in pâtés. Juniper is suitable for seasoning veal and roasted beef.
